Pumpkin Chocolate Chip Cookies

 

 

 

I know it is the beginning of March, and almost Spring. So that’s why I have decided to start doing a little Spring cleaning in my recipe page, by making them easier to print out. 

Since this was the last recipe I shared with you, I thought I would start off here. 

Pumpkin Chocolate Chip Cookies, are my go to recipe to kick off the Fall season. They are our family’s favorite! 

They taste like little mini pumpkin muffin tops, they are super soft and chewy like them too!

Of course you can even make them year round if you get a little pumpkin craving before the pumpkin season starts.

Pumpkin Chocolate Chip Cookies

Makes 60 small cookies. Using a mini cookie dough scoop.


Servings: 5 dozen small cookies

Ingredients
  • 3 cups unbleached flour
  • 3 cups old fashioned oats
  • 1 cup organic sugar
  • 2 cups organic brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp nutmeg
  • 2 tsp baking soda
  • 1 cup mini chocolate chips
  • 1 cup chopped walnuts
  • 4 organic eggs
  • 2 tsp vanilla
  • 1 can organic pumpkin
  • 2 sticks melted organic grass fed butter
Instructions
  1. First, mix all the dry ingredients in a large bowl by hand with a whisk until thoroghly combined.

  2. Put all the dry ingredients in a Kitchen-aid mixing bowl.

  3. Attach the whisk tool.

  4. Add eggs, vanilla, pumpkin, and butter slowly to the dry ingredients and mix thoroughly.

  5. Fold in chocolate chips, and the dough is ready for baking!

  6. With  a small cookie dough scooper drop dough at least 2 inches apart onto a lightly greased cookie sheet or you can use parchment paper.

  7. Bake in a 350* oven for 10-15 minutes, or until the edges are slightly browned.

  8. Enjoy!

Simple Healthy Meals for Busy Mamas and Families: Pizza A La Pesto

Our family love’s pizza, but I don’t always like the ingredients that are in most of them.  So I decided to start making my own at home. And it turned out to be a big hit with the family. So it has become a favorite and part of our monthly or weekly menu.

 Making your own pizza really is a lot easier than you may think. And it is so much fun, for the kids and for adults as well. I just love simple, healthy meals. Especially, ones that are quick.

This pizza only takes about 10-15 minutes to put together and the ingredients are fairly inexpensive.

Which, is a bonus especially when you have a family of six! So I am all about making this pizza!

You can make this pizza completely vegetarian or add chicken to it. That’s the beauty of making your own. You can make it however you like it, and make as many as you need! In my recipe I use mostly Trader Joe’s ingredients. But I am sure you can find all of these ingredients at most super markets.

Pizza a La Pesto

Ingredients
  • 2 bags of Trader Joe's Garlic and Herb Uncooked Pizza Dough/or you can use any organic pizza crust that you like. Sometimes I even use the Boboli pizza crust. Just depends on the situation.
  • 16 oz bag of shredded mozzarella cheese
  • 2 containers of Trader Joe's Pesto/ or any pesto of your choice
  • Italian Seasoning
  • fresh tomatoes thinly sliced
  • fresh vegetables of your choice
  • fresh basil/whole leaves or chopped
  • Coconut oil cooking spray or Olive oil
Instructions
  1. Preheat oven to 425 degrees
  2. Lightly spray coconut oil or olive oil onto pizza pans or stones
  3. If you are using the uncooked pizza dough, prepare as directed on packaging. Then continue to the next step.
  4. Spread pesto onto pizza dough or crusts evenly, leaving the edges free where the pizza crust will be.

  5. Sprinkle mozzarella cheese all around the pizza leaving the edges clear. Add as much as you would prefer. We love cheese so we don't hold back.

  6. Add chicken or any fresh veggies of your choice, fresh tomatoes, and fresh basil. Add more cheese, and Italian Seasoning.

  7. Bake each pizza for 10 minutes or until golden brown.

Simple Healthy Meals for Busy Mamas and Families: Lentil Bruschetta Dip

Gotta keep up with healthy eating habits.

So here is a super simple and yummy recipe for all you busy people out there. (Wink) Including myself!!

This is a favorite for me because it is quick, easy, and healthy!! So I’m in love! I love it especially when it is so hot you don’t want to cook in your kitchen. And if you like to save money, your in luck because this is very affordable and great if you are on a tight budget. Also this dip has been a big hit at family gatherings and potlucks. So I hope you enjoy putting it together and devouring it, as our family has!!

I also added some fresh basil and tomatoes, compliments of my lovely Juice Plus Tower Garden!

My mouth is watering as I type this. LOL

Here is the recipe, I made mine for a family of 6, so I used double the ingredients. Feel free to adjust it to your particular needs. 2015-07-04 13.00.03

It’s called:

Lentil Bruschetta Dip (AKA Poor man’s caviar a recipe from Trader Joe’s)

Ingredients:

 

2 Containers Trader Joe’s Feta Cheese

2 Container Trader Joe’s Bruschetta

2 Package of Trader Joe’s Steamed Lentils

Add all of the ingredients into a good sized bowl and gently mix it together with a big spoon.

Add a bag of organic pita chips or organic tortilla chips and Enjoy!!

Of course you can gather the ingredients from any store or make it all completely from scratch. I just wanted to share this simple recipe for those that needed that easy button, for a quick, nourishing, and fast meal.

Simple Healthy Meals for Busy Mamas and Families: Pasta Bruschetta

 

Hello Friends!

As a stay at home mom of four and a homeschooler, I have to be pretty creative as to what kind of meals I make. Especially, if I want it to be fast, inexpensive, and healthy. We often think that in order to make healthy food it takes too much time and money.  But it really doesn’t have to.

You just have to remember to keep it simple.

So I would love to share with you some recipes that are, our family’s favs.

Here is the first one.

The first recipe is an Italian dish. Yummy!

Here you go!

Cook Time: 30mins.

Recipe Makes: 6-8 servings

Ingredients:

12oz. of pasta of your choice (I used spaghetti)

2 cans (15oz.) diced tomatoes with liquid or 10 freshly diced Roma Tomatoes

1/2 white onion cut into thin slices

6 garlic cloves thinly sliced

2tsp. dried oregano

2 large sprigs fresh basil chopped (Got mine from my Tower Garden)

6 cups free range organic chicken broth

2tsp. extra virgin olive oil

Parmesean Cheese

Directions:

Place pasta into a large stock pot

Add freshly sliced onions and garlic

Add tomatoes

Add oregano

Add freshly chopped basil

Add Olive Oil

Add Chicken broth

Bring to a boil stirring all the ingredients gently together and then simmer until the broth is  almost gone. Continue to stir gently.

Add salt and pepper to taste and top with Parmesean cheese and more fresh basil if you like.

My preference is to let all of the broth simmer out until all the pasta is  done. The house always smells so amazing!

Please feel free to alter the recipe to suite your family’s needs.

You can also serve this with some garlic bread and a salad. Of course, if you are trying to stay away from bread, hold the bread and just add the salad and enjoy!

Torte Di Caprisi (Italian Flourless Chocolate Cake)

IMG_1740  This is the flourless chocolate cake that I mentioned to you. It is absolutely delicious. I honestly cannot remember where in the world I stumbled upon this recipe. If it comes to me I will definitely let you know! All I know is ever since I made this for the first time I fell in love with it. Especially, since I am a big chocolate lover, and it is and was the easiest chocolate cake I’ve ever made from scratch. I am still amazed that it doesn’t have any flour??? You just have to try it.

Flourless Italian Chocolate Cake

Servings: 6
Ingredients
Part One Ingredients
  • 1 lbs. Semi Sweet Chocolate Chips
  • 1 cup unsalted butter 2 sticks
  • 1/4 cup strong coffee
  • 1 tsp. vanilla
Part Two Ingredients
  • 7 eggs
  • 1 cup organic sugar
Instructions
Part One Directions
  1. Melt butter in sauce pan on low heat.

  2. Combine other ingredients after the butter is melted.

  3. Cook on low heat until everything is melted together.

  4. Set aside to cool for part two.

Part Two Directions
  1. Add eggs and sugar to Kitchen-aid mixing bowl.

  2. Mix with whisk tool on high for approximately 6mins., until the eggs start to thicken.

  3. Slowly add sugar.

  4. When the egg mixture starts to thicken, slowly add the melted chocolate and mix on medium.

  5. Spray baking pans with baking spray or choice, and add a piece of parchment paper on the bottom of the pan as well.

  6. Spray parchment paper on the bottom of the pan as well. Then spray again on the parchment paper.

  7. Fill cake pan 3/4

  8. Bake at 350*

    Bake 50-55mins.

    Makes 2/ 9 inch round cakes.

  9. Toothpick the middle to make sure thoroughly baked through.

    Then let cool for 1hr.

  10. When finished baking let cool, then flip it over onto your cake stand or plate, dust with powdered sugar, and garnish with fresh berries of your choice.

After it cooled I dusted a little powdered sugar over it and added some red, sweet juicy strawberries and Wow!  I’ve also tried it with blueberries. And I’m positive it will taste just as divine with some sweet red rasberries. This cake is perfectly sweetened, and the texture is silky, creamy, and it just melts in your mouth. MMM Of course I had to enjoy it with a nice warm cup of coffee.  It was as though I was having dessert in a gourmet pastry shop. My husband said that it tastes so good that he can’t even describe it. Then my oldest son told Grandma and Grandpa that, “Mommy makes the best cake in the whole world”. I was flattered. LOL

I thought that was so sweet of him to say that. It made my heart happy. =)  Again if I remember where I came across this recipe, I will definitely give credit where it is due. =) My husband also told me that he wanted this to be the cake that I make for his birthday. So I didn’t have to argue with him. LOL  Needless to say this cake is obviously a big hit with our family. And has been added to our list of favorite dessert recipes in our recipe binder.
